FABULA Ephemeral terrace at the Carnavalet Museum

An idea for a gourmet dinner just a stone's throw from the Hôtel du Jeu de Paume: Fabula. This is the name of the ephemeral restaurant on the terrace installed in the courtyard of the French garden of the Carnavalet museum.
It's in this exceptional setting that chef Thibaut Spiwack offers you an eco-responsible menu.
For those who do not yet have the pleasure of knowing this chef, here is his career in a few words:
After passing his BEP cuisine, he quickly evolved within prestigious establishments in the capital:
First at the Four Seasons George V as commis de cuisine, then in Alain Senderens' team at Lucas Carton as chef de partie.
In 2011, it was at the restaurant Le Jules Verne, by Alain Ducasse, that he was assistant chef. He then held the position of chef at the Hôtel Particulier Montmartre for three years.
Finally in 2018, Thibaut opened Anona, his own establishment located in the 17th arrondissement of Paris.
His responsible cooking in compliance with ethical and environmental standards has earned him a green star in the Michelin Guide. He is one of the first 50 chefs to obtain it!
In 2022, he participated in Top Chef 2022, introducing the general public to his eco-responsible cuisine.

What is an eco-responsible kitchen? The answer lies in the plates!
The products used come from reasoned certified farmers, everything is in short circuit.

The zucchini comes from Oustalet from a small producer in the Alpilles, the egg from a small farm in Saint Arnoult-en-Yveline, the trout from the Pyrenees.
These products, the chef works them 100% from the peelings to the bark, everything is used on his plates!
Attention the card is offered in Sold Out, when there are no more products there is no more service!
To be sure that you can taste these creations reservation is strongly recommended, share plates to taste everything or not to share, order again, most of the dishes offered are served cold, the wait is fast!

With these superb plates you can enjoy cocktails made by Nico de Soto, best French bartender in 2014, who offers you a selection of 8 cocktails with or without alcohol. The bar is open from 6 p.m. at 2am

During the day, a snacking offer is offered by No More Penguins from 10 a.m. to 6 p.m.
